Mediterranean tuna and artichoke salad

Ingredients

  • ⅓ cup albacore tuna, drained
  • 1 tablespoon mayonnaise
  • 2 cups of romaine lettuce, chopped
  • ½ cup marinated artichokes, drained of liquid (4 larger pieces)
  • ½ avocado, sliced
  • 2 tablespoons creamy balsamic vinaigrette
  • Optional toppings: red onions, olives, bread crisps, cherry tomatoes, currants

Cook

Mix together tuna and mayonnaise, sprinkle with pepper if desired. Arrange lettuce and remaining ingredients on a large plate and top with tuna and additional toppings, if desired.

Serve

Serve with creamy balsamic vinaigrette.
