Mediterranean tuna and artichoke salad

Ingredients
- ⅓ cup albacore tuna, drained
- 1 tablespoon mayonnaise
- 2 cups of romaine lettuce, chopped
- ½ cup marinated artichokes, drained of liquid (4 larger pieces)
- ½ avocado, sliced
- 2 tablespoons creamy balsamic vinaigrette
- Optional toppings: red onions, olives, bread crisps, cherry tomatoes, currants
Cook
Mix together tuna and mayonnaise, sprinkle with pepper if desired. Arrange lettuce and remaining ingredients on a large plate and top with tuna and additional toppings, if desired.
Serve
Serve with creamy balsamic vinaigrette.
