Ingredients

  • 1 cup fresh pineapple, thinly sliced
  • 5 sprigs of mint, smacked
  • 2 tablespoons fresh ginger, peeled, chopped and lightly crushed
  • 8 cups water

Cook

Combine ingredients and refrigerate 2–4 hours. Stir well and strain, discarding solids.

Serve

Serve with plenty of ice, and garnish with mint leaves and pineapple slices.
