- 1 cup fresh pineapple, thinly sliced
- 5 sprigs of mint, smacked
- 2 tablespoons fresh ginger, peeled, chopped and lightly crushed
- 8 cups water
Combine ingredients and refrigerate 2–4 hours. Stir well and strain, discarding solids.
Serve with plenty of ice, and garnish with mint leaves and pineapple slices.
