Veggie Burrito in a Mug

Quick & Easy 1 serving

Ingredients

  • 1 cup pre-cooked brown rice
  • 2-3 tablespoons salsa
  • 1 tablespoon plain Greek yogurt
  •  ¼ cup diced avocado
  • 1 tablespoon shredded cheddar cheese
  • ½ cup low-sodium black beans, drained and rinsed

All the flavor in a single serving

Meals in a mug are great for college students or anyone who wants to make a fast meal or snack at home.

Cook

In large mug or small bowl, combine rice, black beans, plain Greek yogurt and shredded cheese. Microwave on high for 30 to 60 seconds, or until heated through. Top with diced avocado, diced tomato, pico de gallo, crushed tortilla chips, or other desired toppings.
