Berry walnut crumble

Dessert can be part of a healthy, disease-fighting diet with this berry-filled recipe.

Ingredients

Berry mixture:

  • 2 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 1 tablespoon cornstarch
  • 2 cups fresh blueberries (or frozen)
  • 2 cups fresh blackberries (or frozen)

Crumble:

  • 1 cup rolled oats
  • 1 cup finely chopped walnuts
  • 1 cup almond flour
  • ¼ teaspoon salt
  • ½ cup maple syrup
  • ¼ cup butter, melted

Cook

Preheat oven to 350°. In a large bowl, mix together maple syrup, lemon juice, and vanilla. Add cornstarch and toss in the berries. Spoon mixture into a greased 8×8 inch pan. For the crumble mix together oats, walnuts, almond flour and salt. Stir in the syrup and butter until well combined. Spread on top of berries until they are mostly covered. Bake in oven for 40 – 45 minutes or until topping is golden brown.

Serve

Let cool for 10 minutes and serve.
