Omelet in a Mug

Quick & Easy 1 serving


  • 2 eggs
  • 1 tablespoon of salsa
  • 1 tablespoon of shredded cheese
  • Salt and pepper to taste
  • 1 tablespoon of diced or crumbled meat of your choice, such as ham or turkey sausage
  • 1 tablespoon of chopped or grated veggies of your choice, such as broccoli, carrots or peppers


Coat the inside of a mug with cooking spray. Add eggs and whisk together with a fork. Add remaining ingredients. Microwave on high for one minute. Stir and break up any large chunks of egg. Cook for an addition 45 to 60 seconds, or until eggs are set.
