Hot feta artichoke dip



1 can (14 oz.) artichoke hearts, drained
2 pkgs. (4 oz. each) feta cheese
1 cup low-fat mayonnaise
½ cup parmesan cheese, shredded
1 jar (2 oz.) diced pimentos, drained
1 clove garlic, minced
1 tomato, seeded and chopped



Mix all ingredients, except tomato. Spoon onto 9” pie plate or shallow baking dish. Bake at 350° F for 30-35 minutes or until lightly browned. Garnish with chopped tomato. Serve it with assorted crackers or pita triangles.
