| Dr. Ruth Litchfield is the state nutrition
extension specialist for Iowa State University Extension
and an assistant professor in the Department of Food
Science and Human Nutrition. She has degrees in nutrition
from the University of Northern Iowa (BA), Kansas State
University (MS), and Iowa State University (PhD).
Dr. Litchfield is a Registered and Licensed Dietitian
and has served leadership roles including President
of the Iowa Dietetic Association and Co-Chair of Iowa
Partners: Action for Healthy Kids. Her experience includes
acute inpatient and outpatient healthcare as well as
community health promotion.
She is actively engaged in a number of health promotion
programming efforts including Lighten Up Iowa (statewide
initiative to promote physical activity and healthful
eating) and WISEWOMAN (CDC-funded cardiovascular disease
risk reduction program), both of which received a national
health programming extension award – the Priester
Award. Currently, she is involved with a multi-state
USDA-funded Team Nutrition project examining development
and implementation of local school wellness policies.
She has been principal investigator (PI) or Co-PI for
projects totaling 3 million dollars since 2003.
