Turkey and Ham Pinwheels
Ingredients
2 (10-inch) flour tortillas
4 tablespoons light cream cheese, softened
4 ounces turkey or lean ham
1 tablespoon fresh basil, chopped
4 tablespoons sun-dried tomatoes, water packed
1 cup shredded leaf lettuce
Directions
Spread the middle of each tortilla with 2 tablespoons of the light cream cheese.
Arrange 2 ounces of ham or turkey over the cream cheese. Layer the remaining
ingredients over the meat, staying away from the edges of the tortilla.
Starting at one end, roll the tortilla tightly. When finished, cut the
tortilla in half and put toothpicks in both sides to hold together. Cover
and refrigerate for 1-2 hours. Serve. Yields four servings.
