Caramel Corn
Ingredients
6 cups popcorn, popped without salt or fat
1/2 cup packed brown sugar
2 1/2 tablespoons margarine, without trans fat
2 tablespoons light corn syrup
1/2 tablespoon light molasses
1/2 teaspoon vanilla extract
1/4 teaspoon baking soda
1/4 teaspoon salt
Directions
Preheat the oven to 250 degrees. Combine sugar, margarine, corn syrup, and
molasses in a medium saucepan and bring to boil over medium heat. Cook for
about 5 minutes, stirring once. Remove from heat and add vanilla, baking
soda, and salt. Place popcorn in a large bowl and pour sugar mixture over.
Toss to coat.
Spray a 9 x 13 pan with cooking spray. Add popcorn mixture and bake
for 1 hour, stirring every 15 minutes. Cool for 15 minutes before serving.
Yields nine 2/3-cup servings.
