9 oz pkg cheese tortellini
1 pound mixed mushrooms, sliced (such as regular white and portabellas)
3 Tbsp olive oil
4 tsp garlic, minced
¾ tsp dried thyme
½ cup Madeira or dry sherry
Parmesan cheese, if desired
Cook tortellini according to package directions.
Meanwhile, heat 2 Tbsp olive oil in a large frying pan over medium-high heat. Sauté mushrooms until golden, about 8 minutes. Add garlic and thyme and cook 1 minute. Add salt and pepper to taste.
Add Madeira or dry sherry, reduce heat and simmer 5 minutes. Add cooked pasta and simmer 2 minutes. Stir in 1 Tbsp olive oil and sprinkle with grated Parmesan, if desired.
