Hummus

 

Ingredients

1 c. garbanzo beans
1 Tbsp. tahini
(sesame seed paste - often found in the health foods or ethnic foods sections of grocery stores)
2-3 Tbsp. extra light olive oil
1 hot chili pepper, seeded and chopped
2 cloves garlic
1 Tbsp. lemon juice (or juice from 1⁄2 lemon fresh
squeezed)
1 pkg. wheat pita bread
1 jar Kalamata olives
1 tomato, sliced
1 cucumber, peeled and sliced
Chili powder

Directions

Separate garbanzo beans from juice, save juice. In a blender, combine garbanzo beans, olive oil, tahini, chili pepper, garlic and lemon juice. Use juice from the beans and add to mixture to obtain a smooth consistency. Refrigerate for 1 hour.

Cut the pita bread into triangles and serve with kalamata olives, cucumbers, tomatoes, bell peppers, or other cut, fresh vegetables. Garnish with chili powder.
