4 roma tomatoes, sliced in half and hollowed out
Salt and pepper to taste
2 Tbsp. olive oil
1 Tbsp. minced garlic
½ cup of Gorgonzola cheese
2 Tbsp. fresh basil, chopped
2 Tbsp. Italian bread crumbs
Place tomatoes, cut side up, on a cookie sheet. Drizzle olive oil on tomatoes, sprinkle with salt, pepper, and minced garlic.
In bowl, mix Gorgonzola cheese and basil together. Spoon cheese mixture equally into tomato halves, sprinkle with bread crumbs. Broil in oven on low setting 5 to 7 minutes, or until heated through.
