Pepita-apple breakfast bars

Ingredients

1/2 cup honey
1/4 cup coconut oil, melted
1/4 cup natural creamy peanut butter
2 cups quick oats
1/4 cup ground flax
1/4 cup green pepitas (pumpkin seeds)
1/4 finely chopped dried apples
1/2 tsp apple pie spice

 

Directions

Mix honey, coconut oil, peanut butter and oats. In separate bowl, combine flax, pepitas, apples and spice. Combine mixtures and stir well.

 

Spread onto a baking pan and refrigerate for two hours. Cut and serve while chilled.
