Three-Bean Salsa Salad

What are chickpeas?
Also known as garbanzo beans, chickpeas have a nutty taste and buttery texture. They’re rich in iron, low in calories, and an excellent source of protein and fiber.

Improve the nutritional profile of your favorite recipes by incorporating chickpeas in dishes like soups, salads, and pastas. Here are a few ideas to get you started:

  • Make hummus, a chickpea spread, and serve with fresh veggies and wedges of pita bread. Try this hummus recipe leave site from Cooking Light.
  • Lightly coat chickpeas with olive oil, sprinkle with your favorite spices, and bake at 350º F for 30 minutes for a healthy snack.
  • Add chickpeas to vegetable soups and green salads.

Ingredients

2 Tbsp. extra virgin olive oil
2 cups cut fresh green beans
1/2 tsp. ground cumin
salt and pepper to taste
1 15-oz. can chickpeas, drained and rinsed
1 15-oz. can black beans, drained and rinsed
1/2 cup medium-hot salsa
1/2 cup chopped flat-leaf parsley

Directions
In a large skillet, heat the olive oil over high heat for 1 minute. Add the green beans, cumin and a pinch of salt and cook, stirring, until the beans blister slightly, about 5 minutes.

Transfer the green beans to a large bowl, then add the black beans, chickpeas, salsa and parsley; toss. Season with salt and pepper and serve warm or cold.
