sweet potato fries

Grilled sweet potato fries

Serves 4

Ingredients

2 large sweet potatoes, peeled, sliced 1-inch thick
2 tsp olive oil
2 Tbsp balsamic vinegar
Black pepper, to taste

 

Directions

Mix olive oil, balsamic vinegar and pepper. Lightly toss the sweet potatoes into the mixture.

 

Place in a single layer on a sheet pan and roast at 450° for 3–5 minutes. Turn the slices over and roast an additional 2–3 minutes until golden.
